Green Eggs and Yum!


Happy Wednesday!

Today I wanted to share a yummy healthier version of egg salad that is also simple to whip up! I actually was inspired by a video circulating on Facebook and tweaked the recipe just a bit. You can omit the jalapeño if you have little ones who will be eating the salad. Spread it on a slice of sprouted toast for a delicious and filling breakfast. Recipe after the jump! 



Ingredients:
  •  6 eggs
  • 2 Hass avocados
  • 1 tbsp of lemon juice
  • 1/2 a jalapeño (optional)
  • 1 tsp of red wine vinegar
  • 1/4 cup of red onion
  • 1/2 tsp of salt and 
  • pepper to taste.


Directions:
1. Boil your 6 eggs.
2. Peel and Chop up your hard boiled eggs like you would in a regular egg salad.
3. Mash up your avocado until it is smooth (think guacamole)
4. Add your avocado to the chopped eggs and mix it together.
5. Chop up your onion.
6. Add your lemon juice, red wine vinegar, jalapeños if using them, chopped onion, salt, and pepper. Mix it all up until everything is incorporated. 7. Eat as is or spread on a piece of sprouted toast. 7. Enjoy! 

Replacing mayonnaise with avocado is a healthier alternative and so yummy! This is really good and helps take care of a blue, red, and half a green container for you 21 fixers out there. Adding the toast takes care of a yellow. I guess Dr. Seuss was onto something with green eggs and ham! Let me know what kind of recipes you want me to share next!
