Calling All Peanut butter Lovers!


Hello Dah-lings!
 It's finally FRI-YAY!! You know what that means! Recipe time for our Foodie Friday :) Anywho.....I am addicted to Peanut Butter! I am always thinking of ways to get my fix without going crazy. Luckily, ever since I became a coach with Team Beachbody, I have learned countless ways to incorporate this magical nut butter without any guilt! Today I am going to be sharing the recipe of Peanut Butter Protein Pie adapted from Autumn Calabrese's Fixate cook book! Keep Reading below for the recipe!


If you are anything like me, post workout you are starving and drained! It is important to eat after working out to feed your body and muscles. The pic above is what I ate post workout today. I drank my favorite post workout drink ever, Recover, and had a piece of this PB yumminess! Yes, I did Disney-fy my shaker cup.. Don't judge me! Disney for life! So, without further ado I give you the recipe!

Peanut Butter Protein Pie
Ingredients:
  • 1 cup of oat flour
  • 1 cup of vanilla whey protein powder
  • 1/2 cup of almond flour
  • 1/2 tsp of sea salt
  • 1 cup of all natural peanut butter (ingredients should read.. Peanuts and maybe salt, nothing else)
  • 2 tsp of vanilla extract
  • 1/2 cup of unsweetened almond milk
  • 1/4 cup of dark chocolate chips
Steps:
  1. Line a round 8 or 8 inch baking pan with parchment paper (foil works too) and set aside.
  1. Pulse in a food processor the protein powder, almond and oat flour, and salt until mixed together.
  1. Add the almond butter and vanilla and keep pulsing until it is crumbly in texture.
  1. Lastly, add the almond milk and pulse until you have a soft dough.
  1. Spread the dough into the prepared pan and press it down so that it is even. You can use a spatula or big flat knife to smooth it down.
  1. Stick it in the freezer until it is firm (about 15 minutes)
  1. Slice it into 16 even "pie" slices.
  1. Melt the dark chocolate per package instructions and drizzle evenly over your PB pie.
  1. Put it back into the freezer so the chocolate hardens and sets.
  1. Enjoy!! Put back into the freezer for storage in an air tight container for up to a week.
I swear it is that easy and tastes like a peanut butter cheesecake! For some reason, it tastes best frozen so don't store it in the fridge ;) Can't find oat or almond flour? No problem! drop some oats in a food processor and pulse until it resembles flour! The same applies to almond flour just be careful because too much pulsing can turn it into almond butter! I find starting with sliced almonds works best! Hope you enjoyed this recipe! Let me know if you try it and what you think! :)
